This favorite isn’t really a trend or something we like about weddings. This fav has to do with eating healthy.

Recently,  I’ve been so busy that I ignored eating well. For my dinner meals, I at least like to have meat, chicken or fish, veggie and finish it off with a carb. For some reason I like to see 3 things on my plate. But my meals have consisted of In and Out twice in one week, 10 chicken nuggets, and even nothing one night.

Once I get off track with eating right it is really hard to get back on track. Last night I set my mind to making a healthy dinner. It really only took 45 minutes to prep and cook the meal. Here is what I had: salmon with honey bbq sauce, bulgar pilaf, and zucchini and tomatoes. For the salmon I buy the frozen filets at Costco.  They defrost quickly and take 20-25 minutes to cook. The bulgar is a better option than rice since it is a whole grain. Bulgar is a Mediterranean food so you may find it in a speciality store. Cut up mushrooms, add 1/2 cup bulgar and 1 cup chicken broth and cook for 40 minutes in a 350 degree oven. For the zucchini, I just cut them up, add cherry tomatoes, a splash of chicken broth and season with garlic salt.

I’m really glad to get back to healthy eating. For all of the brides out there who have become so busy with planning, take a day to recharge your eating habits. Sit down and make something healthy and fresh, or plan out a grocery list and go shopping with your spouse to be.  Eating health is just one way to get in shape for your wedding.
